Abstract:Antarctic krill(Euphausia superba)was rich in high-quality protein,which was considered to be the largest resource of animal protein for food and medicine.In this paper,the research progress of Antarctic krill protein was reviewed,and its nutritional properties,preparation methods,modification techniques and biological activities were introduced in detail.The existing problems and future development of Antarctic krill protein were also summarized.The purpose of this paper was to provided technical reference and theoretical support for the high-value development and utilization of Antarctic krill protein.
