中文摘要: 雌激素是一种类固醇物质,对人体心血管系统、神经系统等具有一定的保护作用,但摄入过量的雌激素会增加乳腺癌、自身免疫疾病的发病率,加剧哮喘等炎症症状。研究表明,牛奶、大豆、肉制品以及食品包装中均存在雌激素。由于雌激素具有高度的稳定性,能够在食品原料中积蓄并通过食物链传递进入人体,从而干扰人体固有的内分泌系统,产生不良影响。因此,发展针对食品中雌激素的检测方法愈发重要。目前,传统的雌激素仪器检测方法具有局限性,无法满足特异性、快速的检测需求。该文就食品中基于雌激素效应通路的生物学检测方法进行综述,并对雌激素检测的发展方向进行展望。在未来发展中,可利用雌激素对细胞的毒性效应,结合分子检测以及数字化的检测设备,对食品中的雌激素进行评估。
Abstract:Estrogen is a steroid substance,which has a certain protective effect on cardiovascular system and nervous system.However,excessive intake of estrogen can increase the incidence rate of breast cancer and autoimmune diseases,and aggravate the symptoms of asthma.Studies have shown that estrogen exists in milk,soybean,meat products and food packaging.Because of its high stability,estrogen can be accumulated in food raw materials and transferred into human body through the food chain,thus interfering with the inherent endocrine system of human body and producing adverse effects.Therefore,it is more and more important to develop the detection methods of estrogen in food.At present,the traditional detection method of estrogen instrument has limitations,which can not meet the specific and rapid detection needs.In this paper,the biological detection methods based on estrogen effect pathway in food were reviewed,and the development direction of estrogen detection was prospected.In the future development,it was not only necessary to optimize the pretreatment methods to improve the extraction efficiency of estrogen,but also to evaluate the estrogen in food by used the toxic effect of estrogen on cells and molecular detection.
