中文摘要: 坚果是我国重要的林果资源,因其口感好、营养价值高受到广大消费者的喜爱,但目前的常规检测手段都是一次性、破坏性的。近红外光谱分析技术(near infrared spectroscopy,NIRS)具有速度快、操作简单、绿色无污染等优点,是用于坚果检测的一种有效技术。对近年来近红外光谱分析技术用于检测坚果的蛋白质、脂肪酸、含水率、淀粉、霉变、褐变、遗传育种、品种识别等方面的研究进行分类介绍,并对近红外光谱分析技术在坚果检测上的应用进行总结和展望,以推动其在坚果检测领域的进一步应用。

Abstract:Nuts are important forest fruit resources in China.They are loved by consumers because of their good taste and high nutritional value.However,the conventional detection methods are all one-time and destructive.Near-infrared spectroscopy (NIRS),which is a powerful technique for detection of nuts,has the advantages of fast speed,simple operation,and non-pollution.In this paper,the authors reviewed the application and trends of NIRS technology in detection of the protein,fatty acid,moisture content,starch,mildew,browning,genetic breeding and variety identification of nuts,and discussed the applied prospects to promote its applications to the field of nuts detection research and practical programs in our country.
