中文摘要: 以武夷山大红袍驻芽三四叶为原料,采用武夷岩茶制作工艺,对比做青时采用炭火和暖气机组加温对做青间环境和做青过程中大红袍生化成分变化的影响。结果表明:炭火升温的做青间温度和CO2浓度比暖气机组升温做青间高,两者的相对湿度区别不大;对比晒青叶,至做青结束时,两者的水浸出物含量皆无显著变化,而两者的茶多酚含量皆呈明显下降趋势,炭火做青间和暖气机组做青间中大红袍的茶多酚含量分别降低11.12%和23.1%;对比晒青叶,炭火做青间中大红袍的黄酮类化合物含量略有升高,而暖气机组做青间中则显著降低(P=0.021<0.05);两者的游离氨基酸总量皆呈波动式上升变化,与晒青叶相比,炭火做青间和暖气机组做青间中大红袍的游离氨基酸含量分别升高19.55%和10.75%;暖气机组做青间所制毛茶品质更优。
Abstract:Taking three or four leaves of the bud of Wuyishan Dahongpao as raw materials,using Wuyi rock tea production technology,compared the effects heating with charcoal fire and heating unit on the environment and biochemical composition changes of Dahongpao in the process of Green-making.The results showed that the temperature and CO2concentration of the Green-making room heating with charcoal fire were higher than that of the heating unit,and the relative humidity of the two was not different;contrasting the solar-withering leaves to the end of Green-making,there was no significant change in the content of tea polyphenols between the two groups.The content of tea polyphenols in the charcoal Green-making room and heating unit Green-making room were decreased by 11.12% and 23.11% respectively;compared with solar-withering leaves,the content of flavonoids of Dahongpao in the charcoal Green-making room were increased slightly,but decreased significantly in the heating unit Green-making room(P=0.021<0.05);the total free amino acids of both groups fluctuated upward.Compared with the solar-withering leaves,the free amino acids of the Dahongpao in the charcoal Green-making room and heating unit Green-making room were increased by 19.55% and 10.75% respectively;the quality of raw tea made in the heating unit Green-making room was better.
