中文摘要: 多糖是一类具有多种生物活性的生物大分子,因其具有安全、副作用少等优点,被认为是食品和药品中的理想原料。化学修饰能够改善多糖的结构性质和生物活性。多糖经修饰成不同结构的衍生物,其生物活性存在显著差异。该文总结了近年来多糖化学修饰的研究进展,主要从方法、结构和生物活性构效关系等角度进行阐述,并对多糖的该方法的应用进行展望,为开发多糖类新型功能食品和药品提供参考。
Abstract:Polysaccharide is considered to be a kind of macromolecule substance with a variety of biological activities.It is considered as an ideal raw materials for food and medicine due to its safety and few side effects.Chemical modification can improve structure characteristics,and biological activities of polysaccharides.The biological activity of modified polysaccharides is different with different structure.Therefore,this paper summarized the research progress of polysaccharide chemical modification,included methods,structural characteristics and structure-activity relationship,prospected the application of this method for polysaccharides,in order to provided reference for the development of new functional foods and drugs.
