中文摘要: 为阐明“橙色奇迹”黄树莓不同发育时期果实的抗氧化特性,试验以“橙色奇迹”黄树莓的青果、白果、黄果、黄红果4个发育时期的果实为试材,对抗氧化酶活性、总酚含量及其清除1,1-二苯基-2-三硝基苯肼(1,1-diphenyl-2-picrylhydrazyl,DPPH)自由基的能力进行研究。在果实发育过程中,超氧化物歧化酶(superoxide dismutase,SOD)活性呈现上升趋势,过氧化氢酶(catalase,CAT)活性呈现先上升再下降趋势,过氧化物酶(peroxidase,POD)活性呈现下降趋势,总酚含量及其清除DPPH自由基的能力均呈现先下降再上升趋势。SOD活性、CAT活性、POD活性最高的时期依次为黄红果、白果、青果,分别是35.58、11.69、20.51 U/(g·min)FW,总酚含量及其清除DPPH自由基的能力最高的时期均为青果,分别是29.30 mg/g FW和50.37%,均极显著高于其他3个时期。总酚含量与清除DPPH自由基的能力呈极显著正相关,该研究为“橙色奇迹”黄树莓果实抗氧化食品的研发以及适时采收提供一定的理论依据。

Abstract:The purpose of this study was to clarify the antioxidant properties of the yellow raspberry fruits at different developmental stages.The activity of antioxidant enzymes,total phenolic content and scavenging capacity of DPPH free radical were studied using the 'Orange Miracle' yellow raspberry fruits at different development stage (green fruit,white fruit,yellow fruit and yellow red fruit) as materials.During fruit development,superoxide dismutase (SOD)activity showed an upward trend,catalase (CAT)activity first increased and then decreased,and peroxidase (POD)activity showed a downward trend,the total phenol content and its ability to scavenge DPPH free radicals showed a downward trend and then an upward trend.The periods with the highest SOD activity,CAT activity,and POD activity were yellow red fruit,white fruit,and green fruit,which were 35.58,11.69,20.51 U/(g·min)FW,respectively.The period with the highest total phenol content and its ability to scavenge DPPH free radicals were all green fruits,respectively 29.30 mg/g FW and 50.37%,which were significantly higher than the other three periods.A significant positive correlation was found between total phenolic content and DPPH free radical scavenging ability.This study provided a theoretical basis for timely harvesting and development of antioxidant foods based on' Orange Miracle' yellow raspberry fruit.
