近红外光谱大数据分析塔罗科血橙内在品质的研究

中文摘要: 可溶性固形物(total soluble solid,TSS)、可滴定酸(titratable acidity,TA)及维生素 C(vitamin C ,VC)含量是评价柑橘内在品质及风味的重要特性指标,应用近红外光谱(near infrared spectrum instrument,NIRS)对塔罗科血橙内在品质进行无损、快速检测。利用近红外光谱(NIRS)收集100个塔罗科血橙样品的300个原始光谱数据,处理得到100个平均光谱,其中随机抽取67个作为校正集,33个作为预测集;运用偏最小二乘法(partial least squares,PLS)建立校正与预测模型,再通过实际验证评价建立的PLS模型的性能;试验得到TSS、TA及VC预测值与实际值的相关系数r值分别是0.833、0.699、0.925;将PLS模型进行实际验证,TSS的差异基本表现在1%以内,占比71.43%;VC基本表现在5 mg/100 mL以内,占比70.00%。结果表明NIRS可作为一种快速、无损的方法检测塔罗科血橙的内在品质,但TA的相关系数较差,还有待进一步研究。
Abstract:Total soluble solid(TSS),titratable acidity(TA)and vitamin C(VC)are important characteristic index for evaluating the internal quality and flavor of citrus.In this experiment,near infrared spectroscopy(NIRS)was used to detect the internal quality of tarocco blood orange nondestructively and rapidly.Near infrared spectroscopy (NIRS)was used to collect 300 original spectral data of 100 tarocco blood orange samples,and 100 average spectra were obtained 67 of them were used as correction sets and 33 as prediction sets.Partial least squares (PLS) was used to establish correction and prediction models,and then the performance of the PLS model was evaluated through actual verification.The correlation coefficients r of predicted and actual values of TSS,titratable acid and VCwere 0.833,0.699 and 0.925.The PLS model was validated in practice.The difference of TSS was less than 1%,accounting for 71.43% and VCwas less than 5 mg/100 mL,accounting for 70.00%.The results showed that NIRS could be used as a fast and nondestructive method to detect the intrinsic quality of tarocco blood orange,but the correlation coefficient of titratable acid was poor,which needed further study.
