中文摘要: 肥胖症已成为全球性的流行病,并且患病率日益增加,影响人类生命健康,开发具有降脂减肥功能的健康食品,具有广阔的市场前景。该研究以葡萄多酚、山楂、荷叶、红茶等为原料开发具有降脂减肥功能的固体饮料。采用正交试验确定最优工艺条件为:山楂提取物添加量8%,葡萄多酚添加量5%,红茶提取物添加量9%,荷叶提取物添加量6%,甜菊糖苷添加量1%,大豆蛋白粉添加量71%。在此最优配方的基础上制成5 g/袋的固体饮料,颗粒均匀,各项质量指标符合相应国家标准要求,用开水冲调搅拌均匀后,酸甜适中,口感清爽,风味独特,符合人们追求的健康理念。

Abstract:Obesity has become a global epidemic and the increasing prevalence of serious impact on human life and health,the development of healthy food with the function of reducing fat and weight has broad market prospects.In this project,grape polyphenols,hawthorn,lotus leaf and black tea were used as raw materials to develop solid beverage with the function of reducing fat and weight.The optimum technological conditions were as follows:hawthorn extract 8%,grape polyphenol 5%,black tea extract 9%,lotus leaf extract 6%,stevio-side extract 1%,soybean protein powder 71%.On the basis of this optimum formula,a 5g/bag solid beverage was made with uniform granules and various quality indexes met the requirements of the corresponding national standards.After mixing with boiled water,the beverage was moderately sweet and sour,with a refreshing taste and a unique flavor,in line with people's pursuit of the health concept.
