中文摘要: 黄酮化合物是一种生物活性物质,具有良好的抑菌作用,其抗氧化功能可有效延缓脂质氧化过程,在畜禽水产防腐保鲜中应用前景广阔。该文通过论述银杏叶、竹叶、蜂胶、甘薯叶、柑橘等不同来源黄酮化合物的成分构成、抑菌机理、抑菌种类、抑菌剂量、使用方式,以及对畜禽水产品质的影响,为将来规模化使用提供一定的理论依据,并对未来应用趋势进行展望。
Abstract:Flavonoids as a kind of bioactive substance,with antimicrobial activity and significant antioxidant activity to delay the lipid oxidation process,will be broadly applied in preservation of livestock and aquatic product.In the article,composition,bacteriostatic mechanism,bacteriostatic species,bacteriostatic dosage,usage of flavonoid compounds from different sources (ginkgo biloba leaves,bamboo leaves,propolis,sweet potato leaves,citrus)were reviewed.And their effects on the quality of livestock and poultry aquatic products were discussed,thus providing a theoretical basis for the future large-scale use.Finally,the future application trends of flavonoid compounds were prospected.
