中文摘要: 云南野生食用菌种类多,食药用价值高,但产品形式单一,精深加工能力不足,这些因素严重制约着云南省野生食用菌产业的发展。该文以云南省出口量最大的牛肝菌和松茸为研究对象,在分析其加工利用现状的基础上,提出野生食用菌资源可持续利用、贮藏保鲜技术、开发包括边角料在内的野生食用菌新产品等措施,以期为进一步提高云南野生食用菌综合利用价值和云南省野生食用菌产业的发展提供合理的建议。
Abstract:There are many kinds of wild edible fungi in Yunnan province,which have high edible and medicinal value,but the processed product form is single and the deep processing capacity is insufficient.These factors seriously restrict the development of wild edible fungi industry in Yunnan.Taking the largest export of edible fungi,Boletus and Tricholoma matsutake as the research object,based on the analysis of the present processing and utilization,the processing industry countermeasures of wild edible fungus resources were proposed,including sustainable utilization of resource,fresh-keeping technology,and development of new products of wild edible fungi,and by-products was also included.These measures could be improve the comprehensive utilization of Yunnan wild edible value,and provide reasonable suggestions for the development of wild edible fungus industry in Yunnan province.
