Abstract:The concept,characteristics,materials,preparation methods and characterization methods of microcapsulation technology were briefly introduced.The microcapsulation technology applications in tea drinks,milk drinks,power drinks,fruit juice as well as solid drinks in the field of beverage processing were summarized.It provided a theoretical basis for the research and application of microencapsulation technology in beverage processing,also provided reference for the development of new beverage products.
