中文摘要: 为全面了解云南榧子的营养价值,利用广泛靶向代谢组学技术检测其代谢物。研究结果表明,云南榧子中共鉴定出441种代谢物,主要代谢物为有机酸类(33.75%)、氨基酸类(15.95%)、脂类(12.95%)、维生素类(4.36%)、糖类(2.87%)、核苷酸类(11.05%)、吲哚类(0.97%)、醇类(6.19%)和其他类(12.85%)。对云南榧子营养物质相对含量分析表明,基础氨基酸、脂肪酸和水溶性维生素等代表性营养物质的相对含量较高,分别占各类别的39.92%、19.27%和88.39%。同时,云南榧子中有机酸类与醇类物质可能是构成其独特风味的重要组成部分,其中香兰素与1-葵醇含量较高,分别占有机酸类与醇类的2.76%、30.24%。
Abstract:The technique of widely targeted metabolomics was used to detect metabolites produced by seeds of Torreya yunnanensis that helped to comprehensively understanding the nutritive value.The results of the experiment indicated that 441 kinds of metabolites were detected from seeds of Torreya yunnanensis,and the main metabolites contained organic acids(33.75%),amino acids(15.95%),lipids(12.95%),vitamins(4.36%),nucleotides(11.05%),carbohydrates(2.87%),alcohols(6.19%),indoles(0.97%)and others(12.85%).Relative content of nutrients indicated that the content of essential amino acids,fatty acids,watersoluble vitamins and other representative nutrients were higher,accounting for 39.92%,19.27%and 88.39%of each category,respectively.Meanwhile,organic acids and alcohols in Torreya yunnanensis might be the important components of its unique flavor.The contents of vanillin and 1-decanol were higher,accounting for 2.76%and 30.24%of organic acids and alcohols respectively.
