中文摘要: 随着我国水产加工业的迅速发展,每年都会有大量加工副产物被丢弃。从这些副产物中制备明胶具有重要的社会和经济效益。该文综述目前国内外相关研究报道,对水产蛋白源明胶的提取工艺、凝胶特性、改性及应用开发研究进展进行综述,以期为水产加工副产物的高值化利用与寻找更好的陆源哺乳动物明胶替代品提供借鉴。
Abstract:With the rapid development of aquatic product processing industry in our country,a large quantity of non-edible by-products are wasted each year.Preparation of gelatin from these aquatic processing by-products could generate good economic and social benefits.According to current correlative research from home and abroad,the extraction progress,gel characteristics,modification,application and development of aquatic protein-derived gelatins were reviewed in order to provide references for the high-value utilization of aquatic by-products and the searching for better alternatives to mammalian gelatins.
