中文摘要: 苯系物具有神经毒性和遗传毒性,易致癌,会导致贫血和白血病。分析食品中苯系物形成的可能原因,重点综述食品中苯系物检测的主要方法,并总结世界各国食品中苯系物含量调研情况。旨在为进一步开发复杂基质食品中苯系物的检测提供参考以及为食品生产企业控制食品中苯系物的产生提供指导。

Abstract:Benzene series of neurotoxicity and genotoxicity is known to be carcinogenic to humans and may lead to anemia and leukemia.The possible sources of its occurrence in the foodstuffs were evaluated and the main detection methods of benzene series in food were reviewed,furthermore,the investigation situation of benzene series in food of various countries was summarized.This article Aimed to provide valuable references for the further research of the detection of benzene series in complex food matrices,and provide guidance for food manufacturers to prevent possible contamination of benzene series in food.
