中文摘要: 甜荞麦和裸燕麦是内蒙古优势特色粮食资源,但其营养成分,尤其矿物质谱特征缺乏系统的检测评价。对内蒙古6 个主产旗县两年度60 份甜荞米和30 份裸燕麦米的27 种矿物质元素谱进行测定和特征分析。结果显示内蒙古甜荞麦和裸燕麦矿物质十分丰富,多数必需常量和微量矿物质元素显著高于我国食物成分表2004 数据,尤其Mg和P 显著高于其它谷物,且甜荞显著高于裸燕麦,荞麦可作为Mg 元素的最佳天然来源之一。矿物质谱主成分分析(principal component analysis,PCA)显示甜荞和裸燕麦有明显的物种和地区聚类特征。最东部库伦旗荞麦Li、Cr 和Pb显著高于最西部的固阳县,而Se、Ti、Sn、Cd、Cs 和Cu 则相反。地理位置越往东荞麦Se 元素越低,库伦旗荞麦Se 显著低于固阳县。重金属远低于谷物允许残留限量。

Abstract:Common buckwheat and naked oat are the predominant and featured grains of Inner Mongolia,however their nutrients,especially profile of minerals lack systematic determination and evaluation.A total of 60 common buckwheat and 30 naked oat samples were collected from six grain producing banners or counties in Inner Mongolia for two years,and 27 minerals were determined and analyzed.The results showed that Inner Mongolian common buckwheat and naked oat had abundant minerals,most essential macro and micro elements were significantly higher than corresponding data provided in china food composition(table)2004.Mg and P of the two crops were significantly higher than other grains,and from common buckwheat were significantly higher than naked oat.Common buckwheat is one of the best natural Mg resources.Common buckwheat and naked oat both had obvious species and original clustering feature by principal component analysis (PCA)on mineral profile.Li,Cr and Pb of common buckwheat from the most eastern Hure Banner were significantly higher than the most western Guyang County,while Se,Ti,Sn,Cd,Cs and Cu were lower than the most western Guyang County.The farther east,the lower the Se level.Se of common buckwheat from Hure Banner was significantly lower than that from Guyang County.Heavy metals were much lower than the maximum residue limit for cereals.
