中文摘要: 齐墩果酸和熊果酸属五环三萜类化合物,在自然界广泛分布,具有抗炎、抗病毒、抗肿瘤、抗氧化和保肝等多种生物活性,是多种植物的有效成分。该文对近年来齐墩果酸和熊果酸提取、分离及测定方法的最新研究进展和成果进行总结,为齐墩果酸和熊果酸的制备、检测及相关食品的开发提供更多的理论依据。

Abstract:Oleanolic acid and ursolic acid are pentacyclic triterpenoids widely distributed in nature.They have many biological activities,such as anti-inflammatory,anti-virus,anti-tumor,anti-oxidation and liver protection.They are effective components of many plants.In this paper,the latest research progress and results of extraction,separation and determination methods of oleanolic acid and ursolic acid in recent years were summarized,which would provide more scientific basis for the preparation,detection and development of related foods of oleanolic acid and ursolic acid in the future.
