重组鲢鱼粒关键加工工艺研究
Using fresh silver carp as raw material,the key processing technology of recombinant silver carp grain was studied.Based on the single factor test results,the orthogonal test method of three factors and three levels was used to optimize the experiment.The results showed that the best formula of the recombined fish granule was that the amount of sugar added was 1 %,the addition of onion,ginger and garlic was 2 %,the addition of salt was 1.9%,and the sensory score was 93.7±0.4.In addition,according to the principle of Box-Behnken center combination test,with the hardness and sensory score as the response value,the best proportion of the compound silver carp particle compound was determined by response surface method,and the added amount of konjac glucomannan was 0.2%.The hardness of reconstituted silver carp grain was (20.31±0.12)N and the sensory score was 96.9±0.34 with the addition of 0.1%gelatin and 0.075%gelatin.The model had good fitting degree and small error,and could be used for the analysis and prediction of sensory score and hardness index in the study of processing technology of recombinant silver carp grain.
