Abstract:The research progress of conventional nutrients，amino acids，fatty acids and inorganic salts in the muscles of Siniperca chuatsi were reviewed，and compared with several economic freshwater fishes. Further analysis of the composition and content of inorganic salts in the muscles of Siniperca chuatsi was proposed. It was necessary to analyze the vitamin composition and content of the Siniperca chuatsi and the research on deep processing and comprehensive utilization technology.
