中文摘要: 综述翘嘴鳜肌肉中的常规营养成分,包括氨基酸、脂肪酸和无机盐的研究进展,并与几种经济淡水鱼进行比较分析。提出对翘嘴鳜肌肉中无机盐组成与含量进一步分析,对其维生素组成与含量进行分析研究以及开展深加工与综合利用技术研究等问题。
Abstract:The research progress of conventional nutrients,amino acids,fatty acids and inorganic salts in the muscles of Siniperca chuatsi were reviewed,and compared with several economic freshwater fishes. Further analysis of the composition and content of inorganic salts in the muscles of Siniperca chuatsi was proposed. It was necessary to analyze the vitamin composition and content of the Siniperca chuatsi and the research on deep processing and comprehensive utilization technology.
