中文摘要: 探讨海南鹧鸪茶中挥发性成分的含量及组成,解析地区间存在差异的特征性标志化合物,为鹧鸪茶的产地追溯及风味品质提升提供理论支撑。以20 个地区的鹧鸪茶为研究对象,采用顶空固相微萃取-气相色谱质谱联用法(headspace solid-phase microextraction/gas chromatography-mass spectrometer,HS-SPME/GC-MS)检测,结合主成分分析(principal component analysis,PCA)和系统聚类分析(hierarchical cluster analysis,HCA)对不同地区样品进行分类。结果表明:从20 个地区鹧鸪茶中共鉴定出193 种挥发性成分,主要以烯烃类化合物为主(62 种),相对含量占54.87%~79.73%,其次为醛类(37 种,1.61%~8.03%)、醇类(37 种,1.30%~6.12%)、酮类(17 种,0.38%~6.32%)碳氢类、酯类(12 种,0.03%~0.43%)、酸类(8 种,0.00%~0.70%)、呋喃类(7 种,0.07%~1.29%)、酚类化合物(3 种,0.00%~0.29%)等。PCA 分析和聚类分析表明,除海南岛南部区域(分别是三亚、万宁、乐东、陵水、保亭)少数样品外,大部分样品在PCA 的二维得分投影图上按特性各自聚为一类。表明鹧鸪茶中呈香物质丰富且多样,具有较高的研究价值,可为海南鹧鸪茶的鉴别与产地追溯提供理论参考。

Abstract:The paper explore the volatile compounds and their relative contents of Mallotus oblongifolius(partridge tea)from different areas in Hainan Province,and found the characteristic chemical markers among different areas,as well as provided theoretical support for geographical origin traceability and flavor quality improvement of partridge teas. The partridge teas from 20 different geographical origins were used as experimental material in this study,the volatile compounds were determined by head-space solid-phase microextraction coupled to gas chromatography-mass spectrometry (HS-SPME/GC-MS)and submitted to principal component analysis (PCA)and hierarchical cluster analysis (HCA)for multivariate statistical analysis. The results showed that a total of 193 volatile components were identified in partridge teas,the 62 alkenes were the dominant volatile components and their relative contents accounted for 54.87 % to 79.73 %,followed by 37 aldehydes(1.61 %-8.03 %),37 alcohols(1.30 %-6.12 %),17 ketones(0.38 %-6.32 %),12 esters(0.03%-0.43%),8 acids(0.00%-0.70%),7 furants(0.07%-1.29%),3 phenols(0.00%-0.29%)sequentially.PCA and HCA results indicated that most samples were clustered in the 2-dimensional score plot drawn based on these properties,while the southern parts of Hainan island(Sanya,Wanning,Ledong,Lingshui and Baoting)were clustered. Partridge teas were rich in fragrant substance and had high research value,and could provide a theoretical basis for geographical origin identification and traceability of partridge teas from Hainan province.
