中文摘要: 以野木瓜果皮果渣为原料,采用微波辅助法进行野木瓜水不溶性膳食纤维的提取。在单因素的基础上,设定液料比、微波时间、微波功率、pH 值、野木瓜粉末目数、过氧化氢体积分数为自变量,水不溶性膳食纤维(insoluble dietary fiber,IDF)得率为响应值,使用响应面优化微波辅助法提取野木瓜水不溶性膳食纤维的提取工艺。结果显示:野木瓜水不溶性膳食纤维的最优提取工艺为液料比28 ∶1(mL/g),过氧化氢体积分数5%,野木瓜粉末目数50 目,微波功率420 W,微波时间120 s,pH 4.0。野木瓜IDF 提取率可达72.72%,且重复性好,IDF 的持水力为2.76 g/g,溶胀力为5.50 mL/g。研究结果表明微波辅助法提取野木瓜水不溶性膳食纤维工艺响应面模型的建立具有稳定可靠性。
Abstract:Insoluble dietary fiber was extracted from wild papaya by microwave-assisted extraction.Based on the results of single factor experiments,chose liquid -to -solid ratio,microwave-assisted extraction time,microwave-assisted power,pH,the particle size of wild papaya powder,hydrogen peroxide volume fraction as independent variable,the insoluble dietary fiber(IDF)yield was the response value,extraction technology of insoluble dietary fiber from wild papaya by response surface optimization technique.The results showed that the optimum extraction process of insoluble dietary fiber from wild papaya were as follows:the liquid-to-solid ratio of 28 ∶1(mL/g),hydrogen peroxide volume fraction of 5 %,the particle size of wild papaya powder of fifty,microwave-assisted power of 420 W,microwave-assisted extraction time of 120 s,and pH 4.0.The extraction rate of wild papaya could reach 72.72%,and the results demonstrated a good reproducibility,the water holding capacity of IDF was 2.76 g/g,the swelling degree was 5.50 mL/g .That was to say using the model of response surface extracting the wild papaya IDF was stability and reliability.
