两种冷榨花生油理化性质及抗氧化活性的研究

中文摘要: 以黑花生和白沙1016 为试验原料,通过低温冷榨工艺制备花生油,对2 种花生油的感官特性、脂肪酸、酸价、过氧化值以及抗氧化活性等进行评价。结果表明:黑花生与白沙1016 的冷榨油均为黄色、澄清透明的液体,且具有花生油脂固有的滋味和气味;黑花生冷榨油的酸价略高,碘值略低。脂肪酸检测表明:黑花生冷榨油的棕榈酸、油酸、亚油酸、山嵛酸含量略低,亚麻酸含量略高,硬脂酸含量远远高于白沙1016,总的不饱和脂肪酸含量低于白沙1016。抗氧化活性检测表明:黑花生与白沙1016 冷榨油的抗氧化性无显著性差异,然而未经过脱皮步骤的冷榨黑花生油抗氧化活性明显高于其他组。
Abstract:Peanut oil was prepared by cold-pressed with black peanuts and baisha 1016 as raw materials.The sensory properties,fatty acids,acid values,peroxidation values and antioxidant activities of two peanut oils were evaluated.The results showed that the cold-pressed peanut oil of black peanut and baisha 1016 were both yellow,clear and transparent liquid with inherent taste and smell of peanut oil.The acid value of cold-pressed oil of black peanut was slightly higher and the iodine value was lower.Fatty acid test showed that the content of palmitic acid,oleic acid,linoleic acid and docosanoic acid in cold-pressed black peanut oil was slightly lower and the content of linolenic acid was slightly higher.The content of stearic acid in cold-pressed black peanut oil was much higher than that in baisha 1016,and the total content of unsaturated fatty acid was lower than that in baisha 1016.There was no significant difference in antioxidant activity between cold-pressed oil of black peanut and baisha 1016.However,the antioxidant activity of cold-pressed black peanut oil without peeling procedure was significantly higher than that of other groups.
