中文摘要: 建立超高效液相色谱-四极杆/静电场轨道阱高分辨质谱同时测定焙烤食品中10 种合成色素和甜味剂的方法。样品用乙腈水溶液提取,经正己烷去脂净化后,质谱数据采集使用Q Exactive 高分辨质谱的Full MS/dd-MS2 监测模式,以Full MS 一级质谱全扫描提取母离子精确质量数所得的色谱峰面积进行定量,以保留时间和dd-MS2 数据依赖子离子扫描所得的二级子离子质谱图进行定性确证。10 种目标物的精确质量数偏差不大于3×10-6,方法的定量限为 10 μg/kg~200 μg/kg,标准溶液在 1 ng/mL~20 ng/mL 或 10 ng/mL~200 ng/mL 范围内具有良好线性,相关系数均大于0.995,平均回收率64.5%~119.5%。该方法适合于焙烤食品中多种添加剂的筛查和确证。
Abstract:A method for the simultaneous determination of ten artificial dyes and sweeteners in baked food by ultra-high performance liquid coupled with quadrupole/exactive orbitrap mass spectrometry(UPLC-Q Exactive Orbitrap MS)was established.The samples were extracted with acetonitrile aqueous solution and purified with n-hexane.In the process of quantification and qualification,a full MS/dd-MS2 experiment was adopted in mass spectrometry acquisition,accompanied with the full scan MS date for quantification,as well as the date dependent MS2 product ion spectra for qualification.The quantitative limit of the method was 10 μg/kg-200 μg/kg.The mass accuracy error was less than 3×10-6.The standard solution had good linearity in the range of 1 ng/mL-20 ng/mL or 10 ng/mL-200 ng/mL.The correlation coefficients were all greater than 0.995.The average recovery was 64.5 %-119.5 %.The method was suitable for screening and confirmation of various additives in baked goods.
