中文摘要: 对中国5 个不同产地红枣的理化性质、营养成分以及抗氧化能力进行研究。结果表明:山西稷山板枣总黄酮含量最高(3.08 mg GAE/g DW)且DPPH·与ABTS+自由基清除能力最强(4.88 mg Trolox/g DW,8.16 mg Trolox/g DW);河北沧州红枣的·OH 清除能力最高(19.41mgTrolox/gDW);新疆若羌灰枣的蛋白质(6.27%)、总酚(16.34 mg rutin/g DW)与铁离子还原能力(3.62 mg rutin/100 g DW)等多种指标均为最高。河南新郑大枣、山东金丝小枣各项指标相对较低。
Abstract:The physicochemical properties,nutrient composition and antioxidant capacity of red jujube from five different producing areas in China were investigated.The results showed that the total flavonoids content of jujube from Shanxi was the highest(3.08 mg GAE/g DW)and DPPH·and ABTS+free radical scavenging ability was the strongest(4.88 mg Trolox/g DW,8.16 mg Trolox/g DW).The highest scavenging ability of·OH radical was observed in Cangzhou jujube(19.41 mg Trolox/g DW).Protein content(6.27 %),total phenol(16.34 mg rutin/g DW)and ferricion reducing atioxidant power(FRAP)capacity (3.62 mg rutin/100 g DW)of Xinjiang jujubewerethehighest.However,alloftheindexesofHenanjujube,Shandong jujubewererelativelylow.
