中文摘要: 采用全自动顶空固相微萃取(headspace solid-phase microextraction,HS-SPME)和气相色谱-质谱(gas chromatography-mass spectrometry,GC-MS)对我国2 种不同省份的白茶(云南月光白茶和福建白毫银针白茶)的香气成分进行了研究,并比较了它们在香气化学成分及含量上的差异。结果在2 种白茶中共鉴定出香气成分92 种,共有香气成分56 种;两种白茶香气成分均以碳氢化合物和醇类化合物为主,其余化合物含量均较低;月光白茶的香气成分主要是芳樟醇、十三烷、咖啡因、二氢猕猴桃内酯、2,2',5,5'-四甲基-1,1'-联苯基、芳樟醇氧化物、D-柠檬烯、β-蒎烯、2,6,10,14-四甲基十五烷等;而白毫银针白茶的香气成分主要是香叶醇、芳樟醇、芳樟醇氧化物、β-蒎烯、十二烷、雪松醇、苯乙醇、(Z)-3,7-二甲基-1,3,6-辛三烯、水杨酸甲酯等。
Abstract:The aroma components of YunnanYueguang white tea and Fujian Baihaoyinzhen white tea were extracted by fully automated headspace solid-phase microextraction (HS-SPME),and were identified by gas chromatography-mass spectrometry(GC-MS).Then comparison of aroma components and contents between the teas were made.Results showed that a total of 92 aroma components were identified,and 56 of them were identical.Hydrocarbon and alcohol compounds were the major aroma components in YunnanYueguang white tea and Fujian Baihaoyinzhen white tea,while the content of other compounds was low.The major aromatic compounds in YunnanYueguang white tea were linalool,tridecane,caffeine,dihydroactinidiolide,2,2',5,5'-tetramethyl-1,1'-biphenyl,linalool oxides,D-limonene,β-pinene,2,6,10,14-tetramethyl pentadecane,etc,while the major aroma compounds in Fujian Baihaoyinzhen white tea were geraniol,linalool,linalool oxides,β -pinene,dodecane,cedrol,phenylethyl alcohol,(Z)-3,7-dimethyl-1,3,6-octatriene,methyl salicylate,etc.
