中文摘要: 以3种来自不同地区大曲（四川、山东和辽宁）为研究对象，通过分离培养和16SrRNA 鉴定的方法研究不同地区大曲中可培养细菌的种类。结果显示，四川大曲的密度为0.71 g/cm3，含水量为9.89%，pH 值为6.99，从中共分离出 14 株细菌，经进一步确认分别为 Bacillus sp.、B.licheniformis、Staphylococcus saprophyticus 和 Pantoea sp.。山东大曲的密度为0.68 g/cm3，含水量为10.00%，pH 值为6.16，从中共分离出14 株细菌，经进一步确认分别为B.wiedmannii、B.tequilensis、Enterococcus lactis 和 Pseudomonas sp.；辽宁大曲的密度为 0.86 g/cm3，含水量为 11.65%，pH 值为 6.58，从中共分离出9 株细菌，经进一步确认分别为Acinetobacter johnsonii、E.faecali 和Enterobacter sp.。四川和山东产大曲中均发现多种芽孢杆菌，在辽宁产大曲中发现了其他两种大曲中未发现的多株Acinetobacter 属细菌。
Abstract:The cultivable bacteria in Daqu（Sichuan，Shandong and Liaoning）was investigated.The results showed that the density，water content and pH of Sichuan Daqu were 0.71 g/cm3，9.89%and 6.99 respectively.A total of 14 strains were funded in Sichuan Daqu and they were identified as Bacillus sp.，B.licheniformis，S.saprophyticus and Pantoea sp.The density，water content and pH of Shandong Daqu were 0.68 g/cm3，10.00%and 6.16 respectively and Pseudomonas sp.，E.lactis，B.tequilensis and B.wiedmannii was funded in Shandong Daqu.The density，water content and pH of Liaoning Dauq were 0.86 g/cm3，11.65 % and 6.58 respectively and Acinetobacter johnsonii，Enterobacter sp.and E.faecalis were funded in Liaoning Daqu.Bacillus was a common genus in Daqu and some pathogenic bacteria（Acinetobacter）were found in Liaoning Daqu.
