中文摘要: 该文研究大鲵皮肤色素的理化性质及功能作用。采用碱溶酸沉法提取纯化大鲵皮色素,采集其紫外-可见、红外谱图,对大鲵皮色素进行定性分析,并测定其稳定性、抗氧化、抗紫外及抗菌效果。结果表明:大鲵皮色素的紫外最大吸收峰在214 nm,为具吲哚结构的含硫异聚物。其光稳定性和热稳定性良好,受铁离子影响较大,对紫外线吸收效果明显,对羟自由基和超氧阴离子有一定的清除作用。同时,大鲵皮色素对大肠杆菌有明显抑制作用,具有一定的保健功能。

Abstract:The physicochemical properties and functional effects of the skin pigment of the giant salamander were studied.The skin pigment was extracted,purified by alkali solution acid precipitation method.After collection,the giant salamander skin pigment was analyzed qualitatively by the ultraviolet-visible and infrared spectroscopy and their stability,antioxidant,anti-ultraviolet and antimicrobial effects were determined.The results showed that the maximum ultraviolet absorption peak of the skin pigments of giant salamander was 214 nm,which was a sulfur-containing isomer with indole structure.It had good photostability and thermal stability,and was greatly affected by iron ions.It had obvious absorption effect on ultraviolet radiation,and had certain scavenging effect on hydroxyl radicals and superoxide anions.At the same time,the skin pigments of giant salamander had obvious inhibitory effect on Escherichia coli and had certain health function.
