中文摘要: 果胶是一种由α-1,4糖苷键连接D-半乳糖醛酸残基及多种中性糖组成天然复合杂多糖,属于无毒、生物可降解的聚合物。在一定的条件下,果胶可形成水不溶性网状结构凝胶,并作为固定生物活性物质的载体。该文主要总结果胶作为载体的基本性质及近年来荷载生物活性成分的果胶载体研究进展。

Abstract:Pectins are natural complex heteropolysaccharides,composed of α-(1,4)-linked D-galacturonic acid residues and variety of neutral sugars,which is a non-toxic,biodegradable polymer.Under certain conditions,pectin could form water-insoluble reticular gel and act as a carrier to fix bioactive substances.The basic properties of pectin as carrieries and the research progress in relation to pectin carrier loaded with bioactive components in recent years was summarized.
