Abstract:Abstract:The application and research progress of several heating technologies in the food field were introduced.The basic principles of several different heating methods and their influence on foods were analyzed.The technical characteristics,advantages and disadvantages of each heating method were discussed.The appropriate heating methods were found according to the characteristics of different food materials,providing reference for future research and application.
