Abstract:Abstract：The paper was aimed to study the extraction of polysaccharides of Leccinum crocipodium（Letellier.）Watliag by hot water method.Liquid-solid ratio，extraction temperature and time were selected as single factors，and the response surface method was used to optimize the process.The optimum conditions were as follows：liquid-solid ratio 34∶1（mL/g），the extraction temperature 51 ℃，the extraction time 3.1 h，the extraction rate of the polysaccharide was 16.67%，which was close to the predicted value.It showed that the model parameters of the response surface optimization were accurate and reliable.
