中文摘要: 真菌毒素是由真菌产生的一种次级代谢产物,对人畜健康产生严重威胁并导致重大经济损失。传统的毒素脱除方法易引起食品、饲料中化学物质残留,破坏产品品质和营养成分。随着生物技术的快速发展,通过微生物降解真菌毒素越来越受到关注。该文简要介绍了真菌毒素降解菌株的筛选方法以及微生物对几种常见真菌毒素的脱毒作用和机制,为今后的研究提供参考。

Abstract:Abstract:Mycotoxins as a kind of secondary metabolites produced by fungi may trigger serious risks for the health of animals and human,and lead to economic losses.The traditional methods of detoxification easily cause the chemical residues in food and feed,and also the destruction of the quality and nutritional components.With the rapid development of biotechnology,the microbial degradation of mycotoxins has attracted widespread concern.This review briefly introduced the methods of screening strains of detoxification,and focused on the microbial degradation or transformation of several common mycotoxins,which provided a reference for future research.
