中文摘要: 为优化NaCl胁迫联合Ca2+调控下糙米发芽富集γ-氨基丁酸(γ-aminobutyric acid,GABA)的培养条件,通过单因素和Box-Behnken响应面试验考察NaCl浓度、Ca2+浓度、发芽温度及发芽时间4个因素对GABA含量的影响,得出糙米发芽最佳工艺条件。结果表明,发芽糙米在NaCl胁迫联合Ca2+处理下富集GABA的最佳培养条件为NaCl浓度7.50 mmol/L,Ca2+浓度15.0 mmol/L,发芽温度29℃,发芽时间2.3 d,在此条件下发芽糙米中GABA含量为144.98 mg/100 g。研究结果为糙米健康食品的研究提供了一定的理论依据。
Abstract:The aim of this study was to optimize the culture condition for γ -aminobutyric acid(GABA)production in germinated brown rice.Effects of sodium chloride concentration,Ca2+concentration,germination temperature and germination time were optimized by the combined used of single factor test and response surface methodology.Results demonstrated the optimum culture conditions of brown rice GABA accumulation under NaCl stress and calcium regulation were sodium chloride concentration 7.50 mmol/L,Ca2+concentration 15.0 mmol/L,germination temperature 29℃ and germination time 2.3 d.Under such conditions,the highest accumulation of GABA in brown rice was 144.98 mg/100 g.This finding will provide a guideline for further study of brown rice food.
