信阳地区栽种的9种茶树品种加工白茶成分及品质分析

中文摘要: 为筛选适合信阳地区加工白茶的茶树品种,研究以福鼎大白茶、白毫早、乌牛早、舒茶早、平阳特早、信阳10号、紫阳、上梅州和信阳群体种等信阳地区栽种茶树品种一芽二叶鲜叶为原料,在室内自然萎凋30 h、干燥温度90℃的条件下加工白茶,在感官审评的基础上分析其主要生化成分含量的差异。结果表明:白毫早、平阳特早、福鼎大白茶、信阳10号白茶大致都具有较高的氨基酸和可溶性糖含量,并且具有相对较低或较适中的茶多酚、儿茶素和咖啡碱含量,而信阳群体种和上梅州白茶以上成分含量则基本与前四者相反;信阳群体种和上梅州白茶品质相对较差,白毫早、平阳特早、福鼎大白茶、信阳10号相对较适宜信阳地区加工白茶。

Abstract:In order to select the suitable tea varieties for processing of white tea planted in Xinyang,a bud with two leaves of Fudingdabaicha,Baihaozao,Wuniuzao,Shuchazao,Pingyangtezao,Xinyang10hao,Shangmeizhou and Ziyang planted in Xinyang were used as raw material,and to be processed for white tea in room withering 30 h and drying temperature of 90℃ conditions,the differences among the main biochemical components based on sensory evaluation were to be analyzed.The results showed that:Baihaozao,Pingyangtezao,Fudingdabaicha,Xinyang10hao white tea generally had high content of amino acid and soluble sugar,tea polyphenols and catechins and caffeine content were relatively centered,while the content of those components in Xinyang species and Shangmeizhou white tea was basically the opposite of the first four;Xinyang species and Shangmeizhou white tea quality was relatively poor,Baihaozao,Pingyangtezao,Fudingdabaicha,Xinyang10hao relatively suitable for processing of white tea in Xinyang area.
