中文摘要: 生物胺是影响养殖大黄鱼贮藏品质的重要因素,研究探讨不同贮藏温度下生物胺、菌落总数、pH值、挥发性盐基氮及三甲胺的变化规律,并对生物胺与其他品质指标进行相关性分析。结果表明,贮藏温度对养殖大黄鱼生物胺等品质指标具有显著的影响,随着贮藏温度的升高,品质下降速度加快。25℃和4℃贮藏条件下,养殖大黄鱼菌落总数分别于18 h和6 d超出临界值,达到5.56 lg(CFU/g)和5.03 lg(CFU/g),挥发性盐基氮分别于36 h和10 d超出临界值,达到33.85 mg/100 g和31.81 mg/100 g。研究发现腐胺和尸胺与其他品质指标均显著相关,通过SPSS回归分析,建立相应的回归方程,相关系数R2分别为0.915和0.766。

Abstract:Biogenic amines have a significant impact on the quality of cultured large yellow croakers(Pseudosciaena crocea)during storage.Therefore,the change laws of biogenic amines,total viable counts(TVC),total volatile basic nitrogen(TVB-N),and trimethylamine(TMA)at different storage temperature were studied.In addition,the correlation analysis between biogenic amines and other quality indexes was performed.The results indicated that the storage temperature had significant influence on biogenic amines and other quality indexes of large yellow croakers.The quality decreased significantly faster with higher storage temperature.The results showed that TVC exceeded the threshold under 25℃ and 4℃ at 18 h and 6 d,reaching 5.56 lg(CFU/g)and 5.03 lg(CFU/g),respectively.TVB-N exceeded the threshold under 25℃and 4℃ at 36 h and 10 d,reaching 33.85 mg/100 g and 31.81 mg/100 g,respectively.SPSS regression analysis revealed that putrescine(PUT)and cadaverine(CAD)were correlated with the other quality indexes significantly.Relevant regression equations were established,with the R2of 0.915 and 0.766,respectively.
