中文摘要: 研究生物酶法提取红枣膳食纤维,并对提取温度、pH值和红枣用量等制备工艺进行优化。应用提取的红枣膳食纤维为原料,制备一种具有保护肠道健康的运动食品-红枣膳食纤维果冻。经过感官评测试验,证实红枣膳食纤维果冻具有优秀的感官品质。通过为期40 d的人体试食试验,证实红枣膳食纤维果冻可以显著改善运动人员的肠道中益生菌数量,具有一定的应用价值。
Abstract:The extraction technology of jujube dietary fiber was optimized by biologic al enzymatic method,and the extraction temperature,pH value and dosage were optimized.The jujube dietary fiber jelly was prepared by using the extracted jujube dietary fiber as raw material,and a jujube dietary fiber jelly was prepared to protect the intestinal health.After sensory evaluation experiments,confirmed that jujube dietary fiber jelly with excellent sensory quality.By a 40-day experiment,It was confirmed that jujube dietary fiber jelly could significantly improve the bowel dysfunction of athletes,and it had a certain application value.
