中文摘要: 以红景天、枸杞、山楂3种药食同源材料为原料,通过单因素和正交试验研制一种功能性复合饮料。结果表明:该复合饮料的最佳配方为红景天提取液10%、枸杞提取液12%、山楂提取液6%、蜂蜜添加量为1.8%,白砂糖添加量为2.2%,添加0.01%海藻酸钠和0.01%羧甲基纤维素钠时,复合饮料的稳定性最好。该复合饮料呈棕红色,清亮透明,红景天香气浓郁,酸甜适中。
Abstract:In this study,rhodiola,wolfberry and hawthorn as the main raw materials,a complex functional beverage drinks was developed by single factor and orthogonal experiment.The optimal formula was obtained as follows:10%rhodiola extraction,12%wolfberry extraction,6%hawthorn extraction,1.8%honey and 2.2%sugar.Composite beverage displays better stability,when adding 0.01%sodium alginate and 0.01%carboxymethylcellulose sodium.A kind of composite beverage was developed successfully with brownish red,clear and transparent,rhodiola aroma,moderate sweet and sour.
