中文摘要: 测定鸽蛋的水分、灰分、矿物质、粗脂肪、胆固醇、蛋白质、氨基酸、矿物质以及卵磷脂,通过与鸡蛋营养成分相比较,得出鸽蛋的卵磷脂含量为17.86 g/100 g,比鸡蛋高很多;鸽蛋灰分含量(0.83 g/100 g)低,但钾(125 mg/100 g)、铁(2.06mg/100g)、锌(0.8mg/100g)含量均高于鸡蛋;鸽蛋的脯氨酸含量(0.44%)比鸡蛋含量高,因脯氨酸是胶原蛋白合成的其中一种主要氨基酸,表明鸽蛋胶原蛋白含量很高。
Abstract:Water,ash,minerals,crude fat,cholesterol,protein,amino acids,minerals and lecithin were studied and compared with the chicken eggs nutrition.The lecithin content of the pigeon eggs was 17.86 g/100 g,higher than the chicken eggs.Ash content of the pigeon eggs was 0.83 g/100 g,lower than eggs.Potassium(125 mg/100 g),iron (2.06 mg/100 g)and zinc(0.8 mg/100 g)content higher than the chicken egg.Proline content of pigeon eggs was 0.44%showed that collagen more than chicken eggs.
