中文摘要: 探对石榴酒的抗氧化活性进行研究,采用分光光度法测定石榴酒对DPPH·、·OH和O2-自由基的清除能力和石榴酒的还原力,并利用皮肤荧光斑马鱼进行石榴酒的抗氧化活性试验。结果表明:石榴酒在一定范围加入量内对DPPH·、·OH和O2-有良好的清除作用,清除率最大分别为92.95%、82.76%和63.85%。在对皮肤荧光斑马鱼进行石榴酒的抗氧化活性体内试验中,石榴酒浓度在30、40、50μL/mL时,相对抗氧化能力分别达到了39.7%、60.3%、75.4%。
Abstract:The study was to investigate the antioxidant activity of pomegranate wine.The antioxidant activity of the pomegranate wine was evaluated by spectrophotometry on its ability of scavenging 1-diphenyl-2-picrylhydrazy(DPPH·),hydroxyl radical(·OH),superoxide anion radical(O2-·)and total reducing power.The zebrafish with fluorescent skin was used to test the antioxidant activities of the pomegranate wine in vivo.The results showed that pomegranate wine had a well scavenging activity on DPPH·,·OH and O2-·in a certain range,and the highest scavenging activity were 92.95%,82.76%and 63.85%,respectively.In vivo experiment in zebrafish with fluorescent skin showed that the highest scavenging activity of pomegranate wine were 39.7%,60.3%and 75.4%in a certain concentration range(30,40,50 μL/mL).
