中文摘要: 为了解泰州市区各个区域内小麦粉及其制品中多元素分布, 建立电感耦合等离子体质谱法(Inductively Coupled Plasma Mass Spectrometry,ICP-MS)同时测定小麦粉及其制品中的 B、Mg、Ca、Cr、Mn、Fe、Co、Ni、Cu、Zn、As、Se、 Sr、Mo、Cd、Ba、Pb 17 种元素的分析方法。以内标法改善基体效应及干扰,通过标准曲线法计算样品浓度。根据测定结 果可知,泰州市的小麦粉及其制品总体上是安全的,未检出人为添加的污染物。部分面制品在制作或运输过程中可能 存在一些元素污染,市民需均衡合理饮食,避免引起潜在的健康风险。
Abstract:To find out the elements distribution in wheat flour and its products in various areas of Taizhou city, an analytic method by Inductively Coupled Plasma Mass Spectrometry (ICP-MS) was developed for the simul- taneous determination of 17 kinds of elements in wheat flour and its products, including B,Mg,Ca,Cr,Mn,Fe, Co,Ni,Cu,Zn,As,Se,Sr,Mo,Cd,Ba and Pb. The matrix effect and interference were depressed by internal standard method, the concentration of samples could be calculated according to the standard curve. From the de- tection results, the wheat flour and its products in general were safe in Taizhou, and contaminate elements added deliberately could not detected. Part of the wheat flour and its products may be polluted in production process or transport process, so balanced and reasonable diet should be needed to avoid causing potential health risks.
