中文摘要: 以 DPPH 自由基清除率为指标,研究了天然黄茧家蚕品种“金丝一号”茧丝在盐水解、碱水解、酶水解 3 种不 同提取条件下所获蛋白多肽的抗氧化功能活性差异。结果表明:盐水解法时,在 40 % CaCl2 溶液、100 ℃、料液比为 1∶20(g/mL)的提取条件下,蚕丝蛋白多肽 DPPH 自由基清除率平均为 43.15 %;碱水解法时,在 4 mol/L NaOH 溶液、 100 ℃的条件下提取 1 h,DPPH 自由基清除率平均为 45.62 %。酶水解法时,加入 1 000 U/g 碱性蛋白酶,55 ℃处理 4 h,蚕丝蛋白多肽 DPPH 自由基清除率平均为 62.26 %。天然黄茧蚕丝蛋白酶法水解物的抗氧化活性优于盐水解法 和碱水解法。
Abstract:To study the effect of polypeptide antioxidant activity of “Golden Silk I” natural yellow cocoon, DPPH radical scavenging rate was detected of the saline solution, alkali hydrolysis, or enzymatic hydrolysis's polypeptides. The results showed that the saline solution, under the conditions of 40 % CaCl2 solution, 100 ℃, and solid-liquid ratio of 1∶20 (g/mL), DPPH radical scavenging rate averaged 43.15 %. Alkaline hydrolysis, under the conditions of 4 mol/L NaOH solution, 1 h and 100 ℃, DPPH radical scavenging rate averaged 45.62 %. Enzymatic hydrolysis method, under the conditions of joining 1 000 U/g enzyme, 4 h and 55 ℃, DPPH radical scavenging rate averaged 62.26 %. Antioxidant activity of using enzymatic hydrolysis was better than that of saline solution and alkaline solution.
