中文摘要: 以干菠萝皮渣为原料,采用酶法提取菠萝皮渣中的可溶性和不溶性膳食纤维,通过气相色谱法分析所提膳 食纤维的单糖组成,并对其理化性质进行研究。结果表明,菠萝皮渣可溶性膳食纤维和不溶性膳食纤维均含有阿拉伯 糖、木糖、甘露糖、葡萄糖、半乳糖、果糖 6 种单糖,理化性质表明菠萝皮渣可溶性膳食纤维和不溶性膳食纤维均具有 较好的持水力、持油力和溶胀性,同时对胆固醇也有一定的吸附能力。
Abstract:Extraction of soluble dietary fiber(SDF) and insoluble dietary fiber(IDF)from dry powder of pineap- ple peel was studied by enzymatic method. Gas chromatography was used to analyse the monosaccharide compo- nents of SDF and IDF, the physico-chemical properties also was researched. The results showed that the SDF and IDF had 6 kinds of monosaccharide,which were arabinose,xylose,mannose,glucose,galactose and fructose respectively. Dietary fiber(DF)from pineapple peels possessed good water holding capacity, oil holding capaci- ty and swelling capacity, and had cholesterol-adsorption capacity.
