一朵云不同部位营养成分分析及安全性评价

中文摘要: 为研究云南野生植物一朵云(Botrychium ternatum(Thunb.) Sw.)的营养价值及开发前景,测定了一朵云的营 养成分及重金属、硝酸盐和亚硝酸盐含量,并将一朵云与 4 种野生蔬菜和药食两用植物进行了营养成分含量和硝酸 盐、亚硝酸盐含量的对比,并对一朵云的营养价值和重金属、硝酸盐和亚硝酸盐风险进行了评估。研究结果表明:1)一 朵云茎叶和根的粗蛋白、粗脂肪、总糖、纤维素和灰分的含量分别为 3.70 %和 3.17 %、8.15 %和 5.40 %、8.50 %和1.40 %、8.43 %和 1.48 %、7.0 %和 3.80 %,均比经常食用的 4 种野生蔬菜高。此外,一朵云茎叶和根均还有丰富的维生 素 B1、维生素 B2、维生素 B6 及矿物质元素 K、Na、Ca、Mg、Fe、Mn、Zn,尤其是维生素 B6 和 Ca、Fe 的含量极高;2)一朵云 根及茎叶中均未检测出重金属汞,但是,含有一定量的重金属 Cd 、Pb ,但且其含量未超出蔬菜限量标准及中草药限 量标准。此外,一朵云茎叶及根均含有亚硝酸盐和硝酸盐,但是含量极低。
Abstract:This study was conceived to analyze the nutritional value and prospect of the Botrychium ternatum (Thunb.)Sw.The nutritional value and edible risk of wild vegetable were evaluated based on the contents of main nutritional components in Botrychium ternatum (Thunb.) Sw.,the contents of heavy metal elements,and the contents of nitrate and nitrite was calculated, and its comparison with other 4 species of wild vegetables and Chinese herbal medicines was also conducted. The result showed that 1)the contents of crude protein, crude fat, total sugar, cellulose, and ash content of Botrychium ternatum(Thunb.)Sw. were 3.70 % and 3.17 %,8.15 % and 5.40 %,8.50 % and 1.40 %,8.43 % and 1.48 %,7.0 % and 3.80 % respectively and were higher than 4 dai- ly eating vegetables, and the difference was significant .In addition, the stem leaf and root of Botrychium terna- tum (Thunb.) Sw.were also rich in VB1 and VB2、VB6 and mineral elements K, Na, Ca, Mg, Fe, Mn,Zn; 2)the content of Hg was zero,but the contents of Cd and Pb were lower vegetables limited standard and Chinese herbal medicines limited standard. Moreover, the stem leaf and root of Botrychium ternatum (Thunb.) Sw. were con- taining nitrite and nitrate, but the content was very low.
