中文摘要: 离子液体因具有良好热稳定性、可溶解物质范围广、起始分解温度高等特点而备受关注。在离子液体研究文 献统计分析的基础上,综述了离子液体在食品加工领域中作为萃取剂、溶剂的应用研究进展,分析了离子液体处理后 目标物的获得方法、目标物结构性质的变化情况,并对离子液体在食品加工领域应用中存在的问题、发展方向和重点 进行了展望。

Abstract:Ionic liquids have received much attention with respect to their advantages such as thermal stability, a wide range of soluble substances, high decomposition temperature. On the basis of analysis on the references about ionic liquids, this paper summarized the usefulness of ionic liquids in food processing industry which was used as extraction, solution, analyzed the methods of getting the aimed compound, the construction when they were deal with the ionic liquids, and proposed the problems and development tendency of ionic liquids in food processing industry.
