3种大蒜中矿质元素含量的测定及分析

中文摘要: 为了分析大蒜中矿质元素的含量差异,选用白皮、紫皮和黑皮 3 种大蒜,通过 ICP-OES 法测定了 15 种矿质 元素的含量。结果表明,大蒜中矿质元素含量丰富,除 Co、Ni 未检出外,K、Mg、Ca、P、Na、Fe、Mn、Zn、Cr、Cu、Cd、Se、Hg 均有检出。其中,K 含量最为丰富,含量范围为 3 524 mg/kg~5 498 mg/kg,且不同品种间存在显著差异(p<0.05)。有益元 素 Ca(102.8 mg/kg~212.3 mg/kg)、Fe(2.56 mg/kg~6.85 mg/kg)、Zn(2.64 mg/kg~3.73 mg/kg)含量均较为丰富,且钙、铁含 量在不同品种间差异显著(p<0.05)。山东莱芜产白皮蒜中钙、铁含量均高于其他两个品种。研究结果表明大蒜能作为 一种补铁补锌功能性食品推广深加工。
Abstract:In order to analyze the different content of mineral elements in garlic, white skin garlic, purple skin garlic and black skin garlic were chosen, and the contents of 15 kinds of mineral elements were determined by ICP-OES. The results showed that the mineral elements in garlic were rich, K, Mg, Ca, P, Na, Fe, Mn, Zn, Cr, Cu, Cd, Se and Hg were checked out except Co and Ni. Among them, the most abundant element was K with 3 524 mg/kg-5 498 mg/kg, and there were significant differences between different varieties (p<0.05). Beneficial elements of Ca(102.8 mg/kg-212.3 mg/kg),Fe(2.56 mg/kg-6.85 mg/kg)and Zn(2.64 mg/kg -3.73 mg/kg) were more abundant, and the content of Ca and Fe was significant different between different vari- eties(p<0.05).The content of Ca and Fe in white skin garlic of Laiwu in Shandong province was higher than the other two varieties. The results showed that the garlic can be expanded as a functional food.
