中文摘要: 以白背毛木耳为原料,利用传统水提法提取白背毛木耳多糖(polysaccharides from Auricularia polytricha,APPs), 分别对传统热风干燥多糖(APPs-H)、真空干燥多糖(APPs-V)和冷冻干燥多糖(APPs-F)的化学组成和抗氧化活性进行 研究。结果表明,白背毛木耳多糖为含有少量的蛋白质的酸性多糖,不同干燥方法将会影响其单糖组成和糖醛酸含量。 APPs-H,APPs-V 和 APPs-F 具有较强的清除 DPPH 自由基、羟基自由基、超氧阴离子自由基和亚硝基自由基的能力和 还原力,在一定浓度范围内,多糖与抗氧化活性及还原能力之间呈正相关关系,干燥方法对白背毛木耳多糖抗氧化活性 造成不同影响,其中 APPs-F 抗氧化活性最强,其次是 APPs-V 和 APPs-H,冷冻干燥是制备 APPs 适宜的干燥方法。
Abstract:Auricularia polytricha was used as raw materials. Polysaccharides from Auricularia polytricha (APPs) were extracted using conventional water extraction. APPs-H, APPs-V and APPs-F were obtained with traditional hot-air drying, vacuum drying and freeze drying, respectively.Chemical composition and antioxidant activities of APPs -H, APPs -V and APPs -F were investigated. The results showed that APPs were acidic polysaccharides containing a small amount of protein.Different drying methods could affect the monosaccharide composition and uronic acid content. APPs-H, APPs-V and APPs-F had a stronger scavenging ability of DPPH radical, hydroxyl radical, superoxide anion free radical and nitroso free radical and reducing power.In a certain concentration range, APPs were positively correlated with the antioxidant activity and reducing capacity. Drying methods had different effects on the antioxidant activity of APPs. APPs-F had highest antioxidant activities , followed by APPs-V and APPs-H. Freeze drying was the best drying method for preparation of APPs.
