中文摘要: 研究蜗牛酶酶解苦瓜渣制备水溶性膳食纤维(Water-soluble dietary fiber,SDF)的工艺及 SDF 的理化性质。探 讨酶解温度、料液比、蜗牛酶添加量和酶解时间对 SDF 得率的影响,通过正交试验确定了最佳工艺条件为:酶解温度 35 ℃、pH 值为 5.5、料液比 1 ∶ 30(kg/L),蜗牛酶添加量 0.4 %,酶解时间 1.5 h,在此条件下 SDF 得率达 13.49 %,持水 力、溶胀性分别达到(10.06±0.63)g/g、(11.61±1.33)mL/g,对脂肪酸、胆酸钠和胆固醇均具有较好的吸附能力。

Abstract:Solubility dietary fiber was prepared from Momordica charantia L. with snail enzyme, the effects of temperature,liquid ratio,enzyme amount and time on the yield of SDF and the properties of SDF were studied. By single factor experiments and orthogonal test, the optimum technological conditions were as follows: temper- ature 35 ℃,pH 5.5,liquid ratio1 ∶ 30 (kg/L),enzyme amount 0.4 % and time1.5 h, under the optimal condi- tions,the yield of water insoluble dietary fiber was found to be 13.49 %,the water-holding capability and ex pansibility were(10.06±0.63)g/g(11.61±1.33)mL/g respectively,showed excellent fat,bile sodium and choles- terol absorbing abilities in vitro assay.
