中文摘要: 以豆渣为培养基,利用羊肚菌进行半固体发酵,通过正交试验优化发酵条件,得到最佳的发酵条件为料液比 1 ∶ 9(g/mL),接种量 3.0 %,发酵时间 9 d,发酵产物中多糖(CMP,Crude Morchella Polysaccharide)含量达到 8.86 %。同时,对 CMP 的功能性进行评价,结合胆酸盐能力试验表明,CMP 对 3 种胆酸盐(无水胆酸盐、脱氧胆酸盐、牛磺胆酸盐)均有结 合效果,其中对脱氧胆酸钠的结合量最高,为(0.16±0.02)mmol/L,证明 CMP 有降血脂功能。体外抗氧化试验表明,CMP 在浓度为 10 mg/mL 时对羟自由基的清除能力达 98.9 %,显示其具有良好的抗氧化性。
Abstract:The semisolid fermentation by Morchella esculenta using soybean curd residue was studied. Orthogo- nal experimental design was employed to optimize the fermentation conditions. The optimal fermentation condi tions achieved for crude polysaccharide production 8.86 % were feed liquid ratio 1 ∶ 9 (g/mL), inoculum size 3.0 % and fermentation time 9 days,respectively. The crude polysaccharide (CMP) was extracted from the fer- mentation substrate,then the function of CMP was evaluated. The results on the ability of bile salt -binding showed that CMP had binding capacities for three kinds of cholates (anhydrous cholate, deoxycholate, tauro- cholate),which demonstrated that CMP had hypolipidemic effect. Meanwhile, CMP exhibited a positive antioxi- dant activity.
