中文摘要: 以鲶鱼骨肉泥酶解干燥法制得的多肽螯合钙粉为主要原料,通过粉末直接压片法制备多肽螯合钙片。首先经 单因素试验优化多肽螯合钙片主要辅料:硬脂酸镁、微晶纤维素、CMC-Na 的添加量。在此基础上,以成品钙片的硬度为 响应值,Box-Behnken 响应面设计法,优化多肽螯合钙片最佳配方。试验结果表明:以 100 g 多肽螯合钙粉为基料,各辅 料的最适添加量范围为:硬脂酸镁 7 %~9 %,微晶纤维素 53 %~57 %,羧甲基纤维素钠 5 %~7%。多肽螯合钙最佳配方 为:硬酯酸镁 7.97 %,微晶纤维素 55.21 %,羧甲基纤维素钠 5.94 %。以最优配方制得多肽螯合钙片表面光滑美观、色泽 一致、口感好,钙含量 2.82 g/100 g,总蛋白含量 12 .00 g/100 g,是一种以多肽与有机钙螯合为一体的优质补钙食品,开发 前景广阔。
Abstract:Calcium peptide chelate powder made from hydrolyzed catfish flesh and bone paste was used as the main material to prepare calcium peptide chelate pellets by direct all-powder compression method. Firstly, the proper dosage of main accessories: magnesium stearate, microcrystalline cellulose, CMC-Na were determined based on single factor optimization. Afterwards, the optimal formula was optimized using Box-Behnken design, taking hardness of calcium peptide chelate pellets as the response. The results showed that, the proper range of magnesium stearatewas 7 %-9 %, microcrystalline cellulose 53 %-57 % and sodium carboxymethyl cellulose 5 %-7 %. The optimal formula for calcium peptide chelate pellets was: magnesium stearate 7.97 %, microcrys- talline cellulose 55.21 %, sodium carboxymethyl cellulose 5.94 %. The calcium peptide chelate pellets had smooth and pretty appearance, uniform color and good taste, with 2.82 g/100 g calcium and 12.00 g/100 g pro- tein.The pellets were good supplementary calcium food with broad development prospects, which effectively combined calcium andpeptide together.
