决明子枸杞金银花复合饮料的研制

中文摘要: 以决明子、枸杞、金银花 3 种药食同源材料为原料,通过单因素和正交试验研制一种具有降血脂功效的复合饮 料。结果表明:该复合饮料的最佳配方为决明子提取液 14 %、金银花提取液 6 %、枸杞提取液 10 %、甜味料(白砂糖和蜂 蜜的比例为 2 ∶ 3)10 %;添加 0.2 %海藻酸钠,4 ℃储藏时复合饮料稳定性最好。该功能性复合饮料呈棕黄色,澄清透明, 酸甜适中,香气柔和协调。

Abstract:Cassia seed, wolfberry and honeysuckle as the main raw materials, a complex functional beverage drinks with hypolipidemic effect was developed by single factor and orthogonal experiment. The optimal formula was obtained as follows: 14 % cassia seed extraction, 6 % wolfberry extraction, 10 % honeysuckle extraction and 10 % composite sweetener(the ratio of sugar and honey was 2 ∶ 3). Composite beverage displays better sta- bility, when adding 0.2 % sodium alginate and storing at 4 ℃. A kind of composite beverage was developed successfully with brown yellow color, clear and transparent, sweet and sour moderate and a soft coordination aroma.
