野生欧李和栽培欧李果实营养成分的比较分析

中文摘要: 对野生和栽培欧李果实营养成分进行比较研究,为进一步开发利用欧李提供依据。分别采用常规分析法、原子 吸收光谱法、GC-MS 法对野生欧李和栽培欧李果实的可溶性固形物、VC、总糖、总酸、Ca、Zn、Fe 及脂肪酸进行分析。结果 显示,野生欧李果实中可溶性固形物、总糖、VC 含量极显著高于栽培欧李(P < 0.01),栽培欧李中的总酸高于野生欧李(P< 0.05);野生、栽培欧李果实中 Ca、Zn、Fe 含量分别为 450.36、12.32、3.28 mg/kg 和 381.24、11.16、2.14 mg/kg,其中野生 欧李 Ca、Fe 的含量显著高于栽培欧李(P < 0.05),Zn 含量二者无显著差异;野生、栽培欧李果实中均鉴定出棕榈酸、油 酸、亚油酸及亚麻酸 4 种脂肪酸,分别占总检出量的 81.17 %和 59.94 %,野生欧李果实中脂肪酸含量高于栽培欧李,其 中不饱和脂肪酸含量,野生欧李果实显著高于栽培欧李果实,特别是油酸含量高出 1 倍多。

Abstract:In order to exploit the resource of Chinese Dwarf Cherry, the composition of nutrients in wild andcultivated Chinese Dwarf Cherry were comparatively analyzed by routine chemical analytical methods, flame atomic absorption spectrophotometric(FAAS) method and GC-MS. The results showed that the contents of sol- uble solids, total sugar, and ascorbic acid in wild Chinese Dwarf Cherry were significantly higher than that in cultivated Chinese Dwarf Cherry (P < 0.01), the total acid content in the cultivated Chinese Dwarf Cherry was higher than that in wild Chinese Dwarf Cherry (P < 0.05); Ca, Zn, Fe contents in wild and cultivated Chinese Dwarf Cherry were 450.36, 12.32, 3.28 mg/kg and 381.24, 11.16, 2.14 mg/kg respectively, the contents of Ca, Fe in wild Chinese Dwarf Cherry were significantly higher than that in cultivated(P < 0.05), the content of Zn had no significant difference between the wild and cultivated Chinese Dwarf Cherry. The 4 kinds of fatty acids determined in the wild and cultivated Chinese Dwarf Cherry were palmitic acid, oleic acid, linoleic acid and linolenic acid respectively, accounting for 81.17 % and 59.94 % of the detected total acids. The unsaturated fatty acid content in the wild Chinese Dwarf Cherry was significantly higher than that of cultivated Chinese Dwarf Cherry, especially the oleic acid content being more than twice.
