黑果花楸果实中花青素含量分布及抗氧化活性

中文摘要: 研究黑果花楸的新鲜果实、果梗榨汁前后花青素含量的分布,并比较其抗氧化活性。以矢车菊素-3-O-葡萄糖 苷(C3G)为标准品,利用紫外分光光度法测定榨汁前后黑果花楸果实中花青素含量的分布;并利用清除 DPPH 自由基 的方法测定不同部位的抗氧化活性。试验结果显示花青素的标准曲线方程为 y=22.381x+0.012 6,R2=0.999 8,样品在9.9 g/mL~26.4 g/mL 范围内线性关系良好,回收率为 97.96 %~100.77 %。去除果实中水分对其含量的影响,黑果花楸新 鲜果实、果梗、榨汁后果实、果梗中花青素含量分别为 23.31、0.96、5.08、0.58 mg/g。其 EC50 值分别为 91.16、916.6、126.6、607.3 μg/mL。花青素含量分布的变化及其抗氧化活性分析结果显示,黑果花楸榨汁后的果渣是一种具有很好抗氧化活 性且花青素含量丰富的功能食品开发原料,为其后续开发奠定基础。

Abstract:The contents of anthocyanins in fruits, fruits stem of Aronia melanocarpa and the samples before and after squeezing juice were studied. And the antioxidant activities of different parts were compared. Using cyani- din-3-O-glucoside (C3G) as the standard, anthocyanin contents were determined by ultraviolet spectropho- tometry. The antioxidant activity in different parts was detected by the method of DPPH free radical scavenging. The result showed that the linear regression equation y = 22.381x + 0.012 6(R2=0.999 8) with the linear range 9.9 μg/mL-26.4 μg/mL and the recovery was 97.96 %-100.77 %. Removal the effects of moisture on fruit, the content of anthocyanin in fruits, fruits stem and pomace of fruit and fruit stem were 23.31,0.96 ,5.08,0.58 mg/g respectively. And their EC50 values of antioxidant activity were 91.16,916.6,126.6,607.3 μg/mL. It showed that the fruit pomace was a kind of functional food raw material with good antioxidant activity and abundant antho- cyanin, which layed the foundation for its follow-up development.
